The inaugural vintage of our Oakville Cabernet Sauvignon is generous and supple, sourced from a wine-growing region that is known for producing powerful, rich, structured wines due to the volcanic and clay soils and high elevation weather conditions.
TASTING NOTES: This rich, complex wine features blueberry and blackberry characteristics framed by notes of violets and tea leaves. Full-bodied, with firm and silky tannins, the flavor profile is dominated by vivid flavors of cassis, blackberries, and mocha. This wine is an ideal candidate for cellaring and should mature well over the next 10 years.
FOOD PAIRING: The bold, robust flavors and tannins in this cabernet pair nicely with proteins like steak, veal, lamb, or bison. Complex spices, not spicy, but flavorful, bring out the fruit characteristics of this wine. Plant-based pairings like olives, eggplants, and mushrooms prepared with fresh herbs work well.
